  • 1 4-ounce can sardines packed in olive oil skinless and boneless
  • 1/2 shallot finely chopped
  • 2 chives minced
  • 1 scallion sliced
  • 1 tsp lemon juice
  • 1 ounce mascarpone cheese
  • Pinch cayenne pepper

  • Drain the sardines. Put them in a mixing bowl and break them up with a fork. If you see any bones or tails, remove them. If you buy skinless and boneless they should be fine.
  • Add shallot, chives, scallion, and mascarpone cheese. Squeeze in a little bit of lemon juice. Add a pinch of cayenne.
  • With a strong spoon, mix everything together. You’ll be pressing and folding. Mix it well. You can add more mascarpone if you think you need it to form a paste.
  • Spread on toast, bread, or crackers.
