14-ounce cansardines packed in olive oilskinless and boneless
1/2shallotfinely chopped
2chivesminced
1scallionsliced
1tsplemon juice
1ouncemascarpone cheese
Pinchcayenne pepper
Instructions
Drain the sardines. Put them in a mixing bowl and break them up with a fork. If you see any bones or tails, remove them. If you buy skinless and boneless they should be fine.
Add shallot, chives, scallion, and mascarpone cheese. Squeeze in a little bit of lemon juice. Add a pinch of cayenne.
With a strong spoon, mix everything together. You’ll be pressing and folding. Mix it well. You can add more mascarpone if you think you need it to form a paste.
