Chicken Salad

Chicken Salad is a lunchtime classic. This recipe keeps it really simple. We start with a rotisserie chicken to make it quick and easy.

  • 1 lb white meat chicken cooked
  • 1/2 small red onion diced
  • 1 rib celery diced
  • 2-3 tbsp vegenaise or to taste
  • 1 tsp Dijon mustard
  • black pepper freshly cracked


  • Cut the chicken into bite-sized pieces.
  • Finely chop the onion and celery.
  • Place all ingredients into a mixing bowl and stir together until well-blended.


Serve immediately.
This recipe can keep in the refrigerator for 3-5 days.
