Chicken Salad is a lunchtime classic. This recipe keeps it really simple. We start with a rotisserie chicken to make it quick and easy.

- 1 lb white meat chicken cooked
- 1/2 small red onion diced
- 1 rib celery diced
- 2-3 tbsp vegenaise or to taste
- 1 tsp Dijon mustard
- black pepper freshly cracked
Cut the chicken into bite-sized pieces.
Finely chop the onion and celery.
Place all ingredients into a mixing bowl and stir together until well-blended.
Serve immediately.
This recipe can keep in the refrigerator for 3-5 days.
