When I was growing up, we always finished our dinner with a salad. My mother made a bowl of salad and we passed it around at the end of our meal. She usually made her own Italian dressing out of red wine vinegar, oil, and a little salt and pepper. Nothing fancy. And we all loved it.

The only time I really ate other salad dressings is when we were on vacation. There was a particular Italian restaurant we always went to, and they had Creamy Italian dressing on their house salad. It seemed so exotic to me at the time.

You can, of course, buy Creamy Italian dressing at the supermarket. But it’s so much fresher and tastier to make your own, and you can vary the seasonings to your taste. I enjoy oregano in my dressing. But you could try basil or thyme or a blend.

Here’s my recipe. I hope you try it with a beautiful salad.
